The Paper Street vineyard is one of the highest elevation vineyards is the Willow Creek AVA. The combination of warm days and cool nights and limestone rich soils produces a Grenache with great intesity and flavor. Only 7 barrels produced.
This Cabernet is sourced from the Geneseo district in Paso Robles with 12% Petit Verdot to added to create a dark and intence wine with both chocolate and cherry notes. Aged in both French and American oak for 18 months then bottles unfined and unfiltered.
Our Petit Verdot comes from the rolling hills on the eastside of Paso Robles. The warm days and cool nights produce a very rich and balanced wine. This Petit Verdot was aged in small oak barrels for 18 months then bottled unfined and unfiltered.
As you enter onto our property, the Cabernet greets you on both sides of the driveway. We have two clones of Cabernet, 4 & 6. These are both very small-berry clones that offer great structure, depth and color. In 2015, we hand harvested the Cabernet on the morning of October 4th. After harvesting we hand sorted the fruit allowing only the best fruit to get into the fermenter. The wine then fermented for 10 days and after pressing went directly to new American oak barrels where it remained for 18 months of maturing. Prior to bottling, we incorporated 8% Petit Verdot that offered a smoothness on the palette. The Estate Cabernet was bottled unfined and unfiltered. It is beautiful now but will continue to age gracefully for the next 5-8 years.
The nickname and story behind this wine is inspired by the two brothers and winemakers, Stephan and Matthew Glunz. A dynamic blend of Syrah, Mourvèdre and Grenache producing an intense wine with a big finish.
Our Reserve Cabernet was grown on our estate vineyard in Paso Robles. This limited production Cabernet was aged in 100% new American oak barrels for 18 months and bottled unfined and unfiltered.
